We have been distilling with our good friends at Cascadia Terroir for many years now, helping to harvest and process plant material as well as doing the lab work, and we finally built our own large still based upon the design of theirs. We do not have a large selection of essential oils or hydrosols available due to concerns about the ethics of working with certain plants as essential oils, but the few plants that grow around us in abundance and also yield an essential oil are luckily some of the most delicious in odor. We work primarily with coniferous trees but also with a few shrubby species
